There is a food triad that for centuries has been fundamental and has filled the dinner tables of the once pre-Hispanic and now Mexican people. We are talking about corn, chili and beans. In this case, we will refer to the green beans.
What do green beans have to do with the aforementioned triad? A lot; since the green beans are the tender bean pod. The green beans belong to the legume family, that is, those pods that house small seeds inside. Generally, they are eaten with the sheath, since they are very soft and easy to chew.
Origin
The word “ejote”, Spanish for green bean, comes from Nahuatl exotl which literally means "green bean." It is native to Mexico and Central America. It has been cultivated for more than 7,000 years. Can you imagine? It is a food that connects you with inhabitants of millions of years ago!
It is an important source of protein, minerals and, above all, a variety of vitamins that help you grow healthy.
It can be prepared boiled, fried, steamed, in salads, in broths and with eggs. Ask your mom what dishes can be prepared with green beans.
On the other hand, in other countries of Central America or Spain it is known as "habichuelas" or “judias verdes."
Ritual sense
In pre-Hispanic cultures, the process of planting, harvesting, cooking and consumption has been accompanied by a ritual and ceremonial sense. There were great feasts dedicated to the different deities and these feasts had a strong promotion of the idea of community.
