Every day, as a parent, you face the dilemma involved in preparing healthy meals for your children. You will have noticed that there is food that your children enjoy more than other and some that they ultimately can't stand. It is not always about our children being inappetent. It turns out that currently, there are children who show intolerance to certain components of certain food. Gluten is a glycoprotein found in commonly consumed cereals such as wheat, rye and even oats. It is responsible for the elasticity of the dough of the flour, which along with the fermentation allows for the bread to acquire volume and that spongy consistency.
Although, gluten can be beneficial for some people, in others it can cause intestinal problems that lead to inflammation of the small intestine and effects on the mucosa of the intestine, which means that the organism can’t absorb adequately the nutrients of the food.
This is because the body doesn't have the necessary enzymes, responsible for breaking down this type of protein. In mild cases, sensitivity to gluten or even allergy occurs; in severe cases, autoimmune problems occur.
Fortunately, there are alternatives, ranging from using other types of flours, gluten free products, to designing a gluten-free diet. Each option will depend on the needs of each person, accompanied by consultation with a specialist in the field. There are flours made with quinoa, corn or amaranth, free of gluten; even fruits such as bananas are used as a substitute in the preparation of dough for pancakes.
Also, it is already common to find increasingly diversified gluten free products, in supermarkets. It is also not inappropriate to opt for a gluten-free diet, which will open the way to other types of food.
The objective is, first of all, to verify what the children consume, their nutritional contribution and if they present some intolerances that may not have been detected.
This, with the purpose that the children develop in a harmonic and integral way their mind, body and spirit and, cultivate in them the care for the food they consume.
